This Venison Chili Rocks!

Not getting enough venison in your diet? Mrs Hoosierman uses this recipe but feel free to substitute to taste such as adding a can of green chili peppers.
2 lb. ground venison
1 can stewed tomatoes
1 can tomato soup
1 (16 oz.) can chili beans in sauce
1 lg. onion, chopped
1 stalk celery, diced
2 tsp. chili powder (optional)
1 tbsp. butter
Cook ground venison with onion and butter - venison has little fat do not drain. Add stewed tomatoes, soup, celery and chili powder until celery is nearly tender. Add chili beans and kidney beans, cook until celery is tender and serve.

My friend Mark Blessinger keeps us in venison. The beauty of venison is you can use an almost infinite amount of the stuff without skimming the grease off the top. Clara uses a two pound roll for a batch so it's very thick. It'd good for tacos too. Anything with chili powder kills the wild taste.
